Vegetable Coconut Cumin Rice

Brown rice is a healthier option to white rice since it is not stripped of nutrients during the stages of processing. Many people tend to avoid brown rice due to the fact that the do not have interesting recipes to make it palatable. Here’s an interesting recipe that could give your brown rice a bit of oomph.

Coconut Cumin Rice

Procedure

  • Soak a cup of rice in a cup of water

  • Heat a sauce pan using medium heat and add some coconut oil, diced onions, garlic, chili pepper, coriander, tomatoes, broccoli and carrots and cook the ingredients for about 3 minutes.

  • Add half a teaspoon of cumin seeds and let the mixture cook for about one minute or until the flavors begin to be released.

  • Add the rice including the water used to soak it

  • Add half a cup of desiccated coconut

  • Add a quarter-teaspoon ¬†of salt and some black pepper (ground)

  • Cover the pan and let it cook for about 15 minutes.

  • Let the contents rest for a few minutes before serving with some salsa salad.
