Gluten Free Chocolate Brownies

Gluten is a protein that helps increase elasticity in dough. Although it is an important ingredient in bakery it is not good from a health perspective. It has been associated with various illnesses and for this reason it is advisable to avoid it at all costs. It is possible to bake great tasting chocolate brownies without using any ingredients tha contain gluten. Here’s the recipe.


  • Half a cup of finger millet flour
  • Half a cup of coconut flour or desiccated coconut
  • Two tablespoons of virgin coconut oil
  • A teaspoon of xanthan gum
  • Half a cup of dark melted chocolate ( you could alternatively use two table spoons of cocoa)
  • Two tablespoons of stevia
  • One third cup of honey or syrup
  • Two teaspoons of vanilla extract or vanilla essence
  • Half a cup of natural yogurt
  • A tablespoon of apple cider vinegar (you could also use fresh lemon or lime juice)
  • A pinch of Himalayan or natural sea salt
  • One free range egg
  • A teaspoon of backing powder
  • One third teaspoon of baking soda

Healthy Brownie


  • Preheat the oven to about 375 degrees Fahrenheit (190 Degrees Celsius)
  • Add all the dry ingredients and whisk them
  • In a different bowl, whisk all the wet ingredients
  • Mix together all the wet and dry ingredients
  • Apply some coconut oil along the bottom part of your ceramic baking dish
  • Pour in the batter into the baking dish
  • Bake for about half an hour
  • Remove the brownies and let them cool for about half an hour
  • Serve with tea, coffee or any other preferred beverage
