  • Good sized red cabbage
  • Salt
  • Caraway seeds
  • Cayenne pepper
  • Water

  • Chop or shred the cabbage, sprinkle some salt over it and gently knead it onto the cabbage until the cabbage begins to release some moisture. This process should take between 5 and 8 minutes.
  • Add one teaspoon of the caraway seeds, a quarter teaspoon of cayenne pepper then mix well while adding a little water. Ensure the cabbage is submerged in a glass jar.
  • Store the container in warm dry place such as a cupboard so that good bacteria can be produced from the mixture.
  • After 3 days, remove the container from the storage area and refrigerate.
