Steak enthusiast will agree that the process of dry-aging adds flavor and give the meat some kick to it. Dry ageing encourages the release of enzymes that that break down hence releasing new flavors that were not previously there. The process of dry-ageing also helps to tenderize the steak and make it even more juicy.
The first step is to find the best marbled beef steaks which are the most suitable for dry ageing.
Procedure
- Use bamboo skewers to suspend the steak in a container and place it in the fridge.
- Pour some salt on the surface of the container ensuring that it does not come into contact with the meat.
- After a period of about a week, the meat will have darkened but will still be fresh.
- You can then cook the steaks according to your preference.
